The macosx readme in the source is meant to be the main build instructions, but I have been lax in maintaining them. I think they are still generally good.
The other in the macosx/pkg folder is just for the insaller package and has no build instructions. The wiki just looks like some random stuff, and does say that the source instructions are the place to start.
