I have added an uninstall section at http://grass.osgeo.org/wiki/Compile_and_Install_Ubuntu#Removal_of_GRASS Generally, a recompile + installation overwrites, so there is no need to remove all stuff if you just want to compile SVN updates. With QGIS, I always remove the binary installation folder to avoid troubles, with GRASS I don't need to do that.
