  Are you interested in spatial analyses in general or GRASS specifically?
If the former, there are many publications, as dead tree books, downloadable
PDFs, and on-line resources. For raster work look for references on map
algebra, for vector work, remote sensing, and other aspects the "best" is
the one that addresses your needs in a way you easily follow and understand.

  For GRASS, specifically, the web introduction and examples are the best
place to start. Remember, grass is a comprehensive set of tools and you need
to know which tool you need for a specific purpose. Then the manual page and
this mail list helps you learn how to use that tool.
