You cannot save in the old format at all (the old format was *.wrm) GH and GHX are essentially the same format, except that *.gh stores the data in binary format and *.ghx stores it as an XML file. Since the new format is still fairly new I made the XML flavour the default, since it's easier to recover data from it if something goes wrong. If the new formats prove to be trustworthy, I'll switch the default over to gh to reduce file size.
