Hi, the official DEB package ( http://docs.graylog.org/en/2.0/pages/installation/operating_system_packages.html#deb-apt) should also work with Ubuntu 16.04 LTS, we just didn't have time to test it properly yet.
It would be great if you could install it on your Ubuntu 16.04 LTS machine and post some feedback whether it worked or not (but we're confident that it does indeed work).
