Hi Tony, there currently aren't any DEB packages for the Graylog Collector working on Debian 7.
You can still download and install the official binaries from https://github.com/Graylog2/collector#binary-download and make your init system start it on boot. This being said, a working SysV init script for the Graylog Collector for operating systems like Debian Wheezy as a pull request to the https://github.com/Graylog2/fpm-recipes/ repository would be more than welcome!
