What I usually do is to compile luatex by hand, from sources, replace my luatex binary with the one I just compiled, and run fmtutil-sys -byengine luatex then I can just test. The problem is that you also need to test with the latest version of luatexbase, etc. and I'm not really sure about the best way to do so... Once gregorio is uploaded on CTAN, Karl will certainly make the import and the people behind LaTeX will be able to test and fix things easily. Looking at the changes of LuaTeX, I'm not sure GregorioTeX will need many changes... Do you think you would have time to take a look at #1071? I'll take a look tomorrow if you can't.
