How did you install Gregorio? Through a Mac package? I've been
unsuccessful trying to recreate your problem on my machine...

I can get LuaTeX (v.0.25.4, as above) to throw a warning at this exact
point (not hang completely), using an old version of gregoriotex.lua
-- but I think it predates all the packages available on the website.
The current gregoriotex.lua file should be safe...

My generic advice (sorry, someone else may be able to suggest
something better) would be:
 - try running lualatex main-lualatex.tex and see if that runs
successfully (output to dvi first, in case it's a problem with direct
pdf output)
 - if that hangs as well, try updating to a more recent LuaTeX
(available at http://foundry.supelec.fr/projects/luatex/ )
