No, there's no trick -- just a bug fix a few months ago that I never backported to the Mac package (sorry about that). Please try updating your install with this newer version of gregoriotex-syllable.tex. You can either place this file inside ~/Documents/Gregorio/tex and then rerun (sudo) fonts/install.py or, if you know exactly where the original was installed in your TeX tree, you can overwrite that old version directly. Let us know if this doesn't fix the multiple include scores for you.
