Hello, you can find on http://home.gna.org/gregorio/gregoriotex/details the details on how to change the size of the notes (and lines) with \setgrefactor. For the text, simply change the font size in LaTeX and it will be alright. Something like \fontsize{15}{15}\selectfont should be alright.
