Hi, If you download the sources (http://download.gna.org/gregorio/examples/benedictiones.zip ), the main tex file is benedictiones.tex. You won't be able to just compile the booklet directly, since Élie wrote that with a much older version of Gregorio with non-standard fonts, but you can read it and follow along with the TeX code.
