Odd, all works for me on Mac OSX 10.6.4. Updated from SVN just this morning and recompiled and reinstalled.
In the examples folder, gregorio PopulusSion.gabc worked fine, as did lualatex main-lualatex.tex. Are you sure you are really running the latest? '\beginscore' is from an older version, if I am not mistaken. The new version outputs \begingregorioscore, so I would suggest looking there. Try gregorio --version. Mine says 2.1.
