Hello,

There's no direct way in gabc to control individual note color, but
you should be able to insert actual TeX code in your score to achieve
this, while using the LaTeX color package.

Description: http://home.gna.org/gregorio/gabc/details#verbatim

One possible way:
name: red note test;
def-m1: {\color{red};
def-m2: };
%%
Test(c3h) test([em1]g[em2]hv./giH'Gh) test(dew_f_EDC[em1]d[em2]) NotRed?(c)

Hope that helps. Or have I misunderstood what you are trying to do?
