The example code just had some mistakes (not only regarding quilismas)...

This (expecting !) has always been the behavior: actually, if you look
at the gabc code for the Alleluia on the front page -
http://home.gna.org/gregorio/ - in the svn repository, or at the
PopulusSion.gabc example file, you can see in the cases you're
describing, the ! (zero width space) is there.
