The gregorio.gtex file does not represent a complete document, but only the chant notation; therefore, it is necessary to create a LaTeX file for the document.

If you have installed the gregorio source code on your system, you can look in the "examples" directory for the following files:
  main-lualatex.tex : this file represents a document
  PopulusSion.gabc : gabc data for a chant

To process these two files, you can type
  gregorio PopulusSion.gabc    # this creates PopulusSion.tex
  lualatex main-lualatex.tex    # this creates main-lualatex.pdf

When you examine main-lualatex.tex, you will see the various LaTeX commands to set the page size, choose the typeface, and set other details. One line in that file will be
  \includescore{PopulusSion.tex}
That line inserts the chant notation into the document.
