You can change the color of text and neumes together using the "color"
LaTeX package.
The LaTeX document file has to contain
\usepackage{color}
Then the gabc file can define and invoke colors:

<v>\definecolor{Green}{rgb}{0.3,0.9.0.3}\color{Green}</v>O(g)
Ma(f_e)ri(fg)a,(e_d_) (,)
I suppose the \definecolor expressions could be moved into the TeX
document.
I don't know yet whether it's possible to control the color of neumes
and text separately.
