This depends on which fonts you're using.
If you're using otf fonts with fontspec, this shouls work. Otherwise, you
may use this workaround in your preamble :
\catcode`\œ=\active
\def œ{\oe}
\catcode`\ǽ=\active
\def ǽ{\'æ}
