Dear fr Tomasz, I'm not sure what the problem is. I have Gregorio installed via compilation (http://home.gna.org/gregorio/installation-mac), and am able to change the chant font with no problem within the GABC file.
I think that Greciliae is the standard font; to my eye, it is the most attractive of the three options. I believe that if you leave out the gregoriotex-font line from the GABC, it should use this by default. Fraternally, bro.
