For those interested, my quick test of what was posted above worked.
Further, I was able to modify the Lilypond-book.engine file for TeXShop
so that it would use lualatex rather than pdflatex. This way I don't
have to mess around on the command line and can work with my document in
the way I'm used to.
For those interested, in Lilypond-book.engine change line 25 from:
my $TEX = 'pdflatex'; # TeX processor
to
my $TEX = 'lualatex'; # TeX processor
As best I can tell from my testing, this doesn't create any problems
with the Lilypond portion of the document.
For the Gregorio portion, you'll need to add a "../" (parent directory)
to the filenames (when you define them relatively) in \includescore, as
Lilypond puts the final tex file that is actually typeset by lualatex in
a subdirectory. A bit awkward logically (as the parent directory you're
referring to is the one where your lytex file is located), but such a
minor inconvenience that I'm not going to worry about it further.
