Some organists and orchestras find it easier to read from 5 lines
staffs. For such people, Lilypond (see http://lilypond.org/) can
offer more flexibility for tweaking the output, but with Lilypond
and gregorian chant, you can expect a lot of issues regarding the
aesthetics of the partitions.

This question does not make very much sense at first sight.
Gregorio is a tool to typeset gregorian chant where one always
has only four lines. What are you trying to achieve? Maybe there
is another possibility.
