Which source file did you download? The files labeled "Source code" are a picture of the repository at the time of the release created automatically by GitHub. Building from them requires all the same tools as building from a clone of the repository (including the tools necessary to build the fonts).

The file "gregorio-x.x.x.tar.bz2", on the other hand (where x.x.x is the version number), already has those files which are system independent built for you (like the fonts).

If you downloaded the first, then the problem may be that the fonts weren't built they way they were supposed to be and so can't be found. Try downloading the partially built source and installing again.

Since you're using a Mac, you might also try the Mac installer. It has all the necessary files pre-built for you.

Unfortunately we can't remove the "Source Code" files from the download page (since GitHub creates and adds them automatically). We should, however, clarify the installation instructions (I'll work on it tomorrow if someone doesn't beat me to it).
