Would you mind sending the generated .gtex file?  Something doesn't make
sense because the files you are sending work fine on my computer using
4.0.0-beta2.  It's almost as if an older version of one of the .tex
files is being used.

For est, use (dfd_15d_c._).  For "i" of Christi, use (i_j_I_G.) unless I
misunderstand you and you don't want them to link, in which case you
would use (i_j_2I_G.).

You actually don't need to put an episema for "ew".  In this case,
(gvF_E_D_ewf_ED) will work the same.

I'm still trying to figure out why you're getting the extra } problem.
If it's some weird version mismatch, then that might explain why these
other things are not working for you.

On Windows there is a batch file installed with Gregorio called
system-setup.bat which will create a file in your %TEMP% directory
called system-setup.log.  If you are using Windows, please run this
batch file and attach the log.  If you are not using Windows, let us
know which operating system you are using and which installer you used
to install Gregorio.
