In your gabc you write

óm(i)(gr)nes(g)

For gregorio this means three syllables (the syllable in the middle
having no text), and thus it doesn't do what you think it should. If you
write

óm(i gr)nes(g)

the output should be much better.

For Gregorio developpers: this case is quite invalid, but it still
exposes a bug, there should be an hyphen one the first (om) or second
(no text) syllable, maybe it could be reported (with low priority), what
do you think?
