I'm not very familiar with the header statements of gregorio. Witch
ones are printed (I think only "mode" and "nabc-lines" by default)?
Witch ones can be "turned on"?

You can check the Users controls -> Commands -> Headers of the
GregorioRef pdf manual. Basically you can capture any header (even a
custom one) and feed it to any macro, it's very flexible.
