Testing it on my own machine, it would appear that the paper size is not
being set correctly: it's trying to put the booklet on a portrait letter
page instead of a landscape one.
To fix this add the following:
\setlength{\paperheight}{8.5in}
\setlength{\paperwidth}{11in}
Based on my testing it doesn't much matter where in the preamble you add
this, but I would put it in the block where the booklet package is
loaded and the page dimensions set.
