Tell us a little more about how you are trying. It works here for some
of my tests.
$ echo '\[-+]' | nroff | grep .
∓
$ echo '\[-+]' | nroff -Tascii | grep .
-+
$ echo '\[-+]' | nroff -Tiso-8859-1 | grep .
∓
$
I'm guessing it's to do with the type of output you're producing.
