Which applications are you trying to get to work with Growl? You listed these, so I'll address them. However, if this isn't everything then you'll need to respond with the rest.
Safari - We decided to retire GrowlSafari due to the impending Sandboxing that Apple is enforcing. At some random point an update to OS X is going to enable Sandboxing with Safari, and then that would have broken GrowlSafari. Rather than spend any further resources on this, we have decided to retire it. I'm not sure what other options there are here. Thunderbird - Mozilla will need to update their Growl support. Since they implemented a pretty custom route for Growl support, it's going to be up to them. iTunes - Download GrowlTunes from the 1.2.2 disk image. We're working on getting GrowlTunes into the app store as well.
