the applications should follow your system language preferences.
go to ->System Preferences…->Language & Text (or whatever that translates to)
check the list of languages there: re-order so that languages are in your 
preferred order, remove any you can't speak :)
you need to restart any applications for the changes you make to take effect in 
them.
