Applications must support and register with Growl to appear in that list. Some apps have support that is out of date, and can have their framework upgraded using Growl Version Detective (available at http://growl.info/downloads#generaldownloads). Some apps can have support added so they appear in the applications list by way of some form of script. If you would list the names of the apps you are trying to get working with Growl, often times we already know what is going on with a particular app.
