It looks like Mattias Ellert's packages for GT 5.0.1 have made it into the
lucid repository, so installation of those packages may be as easy as using
apt-get for the individual pieces.
The complete list of packages in Ubuntu Lucid can be found at:

At a minimum, you probably want
globus-gram-job-manager
globus-gram-client-tools
globus-gram-job-manager-setup-fork (or -pbs, -lsf, -condor, as appropriate)
globus-proxy-utils
you may also want
globus-gridftp-server-progs
if you want to play with GridFTP.
I _think_ that this set of packages (and their dependencies) will result in a
set of binaries on your
system that will be sufficient for submitting jobs and transferring files. I
should note that I have looked at Mattias' patches, but not personally used nor
tested the binaries in the Debian or Ubuntu repositories.

These two documents also show how to install the Globus Toolkit from source,
should the Ubuntu packages not work out.
The Globus Project is currently working on officially supported native
packaging for RedHat/Debian, and expects it to be released in the Toolkit
version 5.2 later this year.
