In case anyone encounters this thread later looking for a solution: I was mistaken. Setting hexpand on the GtkEntry indeed *did* produce the result I'd wanted. I thought I'd tried all the permutations, but it seems I was conflating 'expand' and 'fill'. So: Apologies for the noise.
