As Christian mentioned DocBook makes it easy to generate different kinds of output, and it is also semantically suited for a book or manual. I'd rather not use HTML because the HTML markup does not carry those semantics. Obviously we should still provide a HTML version on the website, but that can be generated from the DocBook source.
