Matthias, you can get the packages from mistral - they should work just fine for you with maemo 2.1 sdk. Add mistral repo, refresh dpkg cache and you should see them.
As Murray C. mentioned, there was an API change between 2.x and 3.0 and what's in 2.1 hildon-wise is marked deprecated in the future. Having said that, I expect the overall impact of the change to be minimal. Up until very recently I used to build all dependencies by myself for n770 following the instruction [1]. But, now that the packages (including development) are prebuilt and optimized, you might avoid the pain. I think mine[2] is the only n770 application that is fully-functional and solely relies on Gtkmm binding (although, I might be mistaken).
