Nice overview of the issues. You might want to look into Omnirom's nice physical access protection feature. Basically, if the screen is locked and the phone detects any kind of adb activity on the USB port, it will shut itself down. adb is what is used to get data off of Android phones, so this feature in combination with full disk encryption and/or app encryption like SQLCipher and IOCipher provides pretty strong protection against unauthorized physical access.
