Hi Adam,
you can try this:
* Put the folders generated by MapTiler into
/sdcard/gvSIG/maps/mytiles_flatx
* Add a new line to the layers.txt file /sdcard/gvSIG/layers/layers.txt
following these instructions [1] where layer_name in your case will be
mytiles.
* Finally inside gvSIG Mini go to Menu>Settings and leave Tile name
suffix in blank and set Tiling strategy to Z/X/Y
