If you open an older Word file in Word 2007, the default is to save it back in that format. In the Save As dialog (still alt-f followed by a), you can choose from a range of formats, including 2007.
If you want to save by default in the old format, go to Word options (alt-f followed by i) and arrow down to Save. There you can choose the format in which files will be saved by default.
