The default editor for Outlook 2007 is Word. That cannot be changed.
Also when outside of a message go to tools, alt-T, then O for options and then ctrl-tab to mail preferences tab once to compose in this message format and arrow down to check what you want here and then tab to OK and press enter. This should take care of this matter. Hope this helps.
