is there somewhere where I can read about how to do this? do both computers need window-eyes or can one run window-eyes while the other runs JAWS?

Yes. Vista (all editions) can act as a remote desktop client, as the utility is included. Vista Business and higher can also host remote desktop sessions.

Yes. Read the sections in Appendix E on how to do this. I think it's
E.4 to be specific.
