Hello Robin, No, all shortcuts keys found in earlier versions of Word (and a few new ones) are available in Word 2007.
Here's the good news: Every item on the Ribbon Bar has a badge; that is, a key combination that lets you access that feature and completely bypass the ribbon - once you learn the badges for your favorite items. Moreover, in Word 2003, there were tool buttons without any key access; now, literally every item has a badge associate with it. Word 2007 does not, however, let you customize the ribbon; that add or remove items. That has been changed in Word 2010 to be released in mid June 2010.
