you have any further questions about it let us know.

Does Window-eyes work with a software called lab sim's?

I have no experience with this software so I will have to leave the answer to 
this question to someone else.
Is there a way to distinguish the computer's components?

Internal and external components fill very different so you should have no 
problem determining which component is which.  You will simply need to 
familiarize yourself with the components and peripherals available on the 
computer system you're going to be working with.
Is it possible for a blind person to format a computer?  If so, how can this be 
done?

Yes this is quite possible you should probably review  the documentation 
provided by Microsoft on deploying an unattended installation of Windows XP or 
Windows Vista, and the directions for deploying Windows Vista also applies to 
Windows 7.
