As for many Microsoft solutions there are a few different paths you can take. I will let you know what I like to do, and others will as well.
Instead of pressing the enter key to open the message, I like to press the context menu key followed by the letter H then pressing the enter key on the attachment I want to open. Then I am asked if I want to open or save. There is a checkbox to never ask the question again, but I prefer to leave this unchecked, since there are times I want to save instead of open.
