I would suggest that you get the book "Getting Started With the iPhone" from 
National Braille Press.  It will walk you through everything that you need to 
know to get going with the iPhone and iTunes.

iTunes works well enough with Window-Eyes.. I personally turn off the genius 
side bar and that seems to make it a little easier to use, but that is a 
personal preference. There is a bit of a learning curve to figure out some of 
the little idiosynchrosies of iTunes but I have been using successfully with my 
iPod and iPhone for quite a while.
