Actually this depends on the e-mail provider. Googlemail uses SSL/TLS and normal password for example. It has nothing to do with how secure Thunderbird is.

Under Tools, Account settings, account name, server settings, there are
two lots of options dealing with security.

Underconnection security, there are three options, none, STARTTL or
SSL / TLS. I am currently using SSL / TLS but no idea what it is. What
is STARTTL and which is better?

Under Authentication Method, there are four options. Normal Password,
encrypted password, Kerbros / GSSAPI and NTLM
It is currently set to normal password but which is better? Encrypted
password would not work and don't know what the other options are.
