Don,

For question 1, open the Window-Eyes Help menu, and make sure "Show Advanced Options" is checked. Next, go to the settings tree, arrow to Verbosity, expand with the right-arrow, down-arrow to Office, expand it, and down-arrow to Word. At this point, arrow to a category you're interested in, and once done, Tab through the options which relate to it.

For question 2, the option to set Outlook Express as your default email client is available from the Tools/Options dialog.
