I just installed IE11 yesterday and disabling tabbed browsing was the
first thing I looked for. I couldn't find it, so I Googled it. According
to everything I found you cannot turn it off in IE11. Here's the closest
thing to a solution I found on a forum discussing it. I haven't tried it
yet so I'm not really sure what it does.
1. Right click on your title bar or menu bar
2. Enable "Show tabs on a separate row"
3. Go to Tools>Internet Options>Tabs
4. Deselect all the Tabbed Browsing options
5. Move down to the section: "When a new tab is opened, open:"
6. In the drop down menu select "Your first home page"
Click "OK" and then "Apply"
Restart IE11. Going forward your will, unfortunately, have an extra bar
across the top, but every time you open a new window it will be the
first tab, so to speak.
You won't have all the tabs populated across the toolbar.
Not exactly disabling, but it works for me. Hope this helps others.

How doI turn off tab browsing? How can I keep it from updating
automatically? I do have Windows 7 64-bit Pro set not to update me
automatically but advise me of new updates. Is this all I need to do or
is there a setting in IE 11 I need to change? Thanks.?
