I'm not sure what your question is: do you want to create a document from a Word template, or do you not like how a template is creating its documents, and so you wish to edit the template itself? If you just want to create a document from a template, just use the File menu and choose the "new" menu item, or press ctrl-n. Once you choose your template, you end up with a Word document, which you edit like any other document; the template just has set the document up for you already, and typed in some of its text.
