Hi Deborah,
If you have scanning and optical character recognition software like
Kurzweil 1000, you can open pretty much any image files with it and the
files would be converted to text. Now, Kurzweil is designed
specifically as a reading aid for the blind, but OCR software in general
does what you are trying to do.
