I would think color could be more related to whatever lighting you are
using, rather than the camera. Have you tried using halogen lighting with
any better result?
There are also all sorts of programs (like Adobe Photoshop) that will tweak
the color of the digital image quite a bit, you could play with the captured
image to get it to match the fabric as you are looking at it in it's natural
state and match it on your monitor.
However, as Dawn pointed out, everyone's monitor's are set slightly
differently, and there is no universal color standard as yet for monitor
viewing of items on the web.

Well, your picture color is only as good as my monitor. So you can get an
expensive camera and tweak it to be perfect for you and it might be
something entirely different when everyone else views your site.
Another $.02 , I've found that both my digital cameras and my scanners
have tended to err on the red end of the spectrum when the weather is
humid. I usually have to tweak the red down in summer, it doesn't seem to
be related to brand.
