Re cravats...
There is a volume by Doriece Colle "Collars, Stocks and Cravats"; White
Lions Pub, 1972 that might help.
The one she illustrates closest to your time period is as follows:
"Ascot suspended from a string tie, c.1875-c.1875"
Usually one wide strip of silk forms the whole ascot.  A two piece style
like this would accommodate a turnover collar."
