Use regular evenweave linen, of the best quality you can find.
Use a filament silk thread. Mark the coif pattern on the linen, allowing
yourself at least a 2" border all around. Mark on the embroidery
pattern; however, if you can do the outline of the coif and the
embroidery marking all in one go that's best. Don't fuss about the
embroidery transfer being washable. In period the cartoons (embroidery
designs) were marked in blue India ink and thus indelible. 

        For the shirt you can choose to appliqué or work directly on the
fabric. I'd choose the latter.

        Bind the edges of the fabric with a twill tape to protect the
edges, then stretch on a roller bar frame, not a hoop. Go nuts.

        After you've finished embroidering unframe the items, cut them
out and hand-sew together.
